Grilled Corn w/ Sriracha Golden Ale Butter

Corn is a great addition to any meal. But with a dish like this, the corn becomes the focus of the meal. Sweet, buttery corn topped with garlic and given a little heat from sriracha is cooked perfectly with our Galleon's Golden Ale.


This golden corn and golden beer make for a golden meal.



Ingredients

  • 1/2 cup unsalted butter, chopped into cubes

  • 3 tbs Galleon's Golden Ale

  • 1 tsp sriracha

  • 1/2 tsp garlic powder

  • 1/4 tsp kosher salt

  • 6 ears of fresh corn, shucked

  • 2 tbs olive oil

  • salt and pepper

  • 1/4 cup chopped cilantro

  • 1/2 cup Cotija cheese for topping

Directions

  1. In a stand mixer fitted with a paddle attachment beat the butter until light and fluffy.

  2. Add the beer, sriracha, garlic, and salt. Beat until well combined.

  3. Add the butter to a piece of plastic wrap, and roll tightly into a log. Refrigerate until set, about 1 hour.

  4. Preheat the grill.

  5. Brush the corn with olive oil, and sprinkle with salt and pepper.

  6. Grill on all sides until lightly charred and tender, 8-10 minutes.

  7. Add the corn to pieces of aluminum foil, top with several slices of butter, and sprinkle with cilantro and cheese.
